- 1 Packs of OP Smoked Chorizo
- 1 medium onion, peeled and chopped
- 2 large russet potatoes, peeled and cubed
- 2 garlic clove, peeled and minced
- 4 cups of fresh kale, stemmed and coarsely chopped (2 bunches)
- 4 cups chicken stock
- 3/4 tablespoon balsamic vinegar
- 2 teaspoons kosher salt
- Freshly ground black pepper
- 2 plum tomatoes, cored and cut into ½-inch dice
Step 1 Begin by placing the sausages in a large pot set over medium-low heat. Allow them to cook until they start to release their fat, which should take approximately 2 minutes.
