Our little gems are made from pork sirloin tip, placed in a brine of fresh herbs, fresh garlic, and fresh onions for 10 days. Then we smoke them over applewood for 10 hours.

    Pork, water, onion, brown sugar, 2% or less of: sugar, salt, sodium nitrite, garlic, spices, black pepper, balsamic vinegar, thyme.

  • Storage & Preparation

    Keep Refrigerated. Wrap in plastic after opening. Enjoy within 7 days of opening.
    Slice thin for sandwiches, thick for ham steaks or gently reheat and serve whole. Damn!

How to enjoy it

Slice the ham as thin as possible using a Chef’s knife. Once sliced, your options are limitless. We love to showcase the purity of our delicious ham by creating a country ham board with a big hunk of quality french butter, flaky sea salt (like Jacobsen’s) and a big dollop of dijon. Just add a quality, fresh baguette and you’re all set. Take it to the next level by adding cornichons. The more butter, the better (trust us).

How it's made

This little gem of a ham is called the sweetheart ham because it's just enough ham for you and your significant other. The cut used to make the ham is called a pork knuckle by butchers. We refer to it as a boneless sirloin tip. We brine it for ten days with fresh herbs, spices and aromatics. Then we truss net it and gently smoked the ham for 10 hours over a blend of hardwood chips.

Slice thin and griddle for a quick hit, or make it your centerpiece at the next family function.
